I ventured out to the health food store today - a little afraid I would be overwhelmed (sweet potato chips, anyone?) but I am so glad I found - organic ground beef and taco seasoning, broccoli, some lara bars, some protein, and a few other wonderful things to get me through the next few days.
Happy June, Everyone! Started this month off right with the yummiest omelet ever with tons of veggies, homeade guac, and extra cripsy bacon! then for lunch a bowl of fruit!
Weekend so far: BBQ with green beans, fajitas with peppers and onions, steak with broccoli, and a few thousand lara bars. The hot rolls and spinach dip were calling out my name at the steakhouse today.
Wednesday 5/26 - Too. Much. Fruit.
Tuesday 5/25 - Post workout meal: taco meat, green beans with garlic, and broccoli. YUM! The spices in the taco meat really make this meal yummy... I have a tendency to get bored of meat very quickly so changing up spices are a great way to surprise my taste buds - without the high fructose corn syrup of sauces and dressings. I really don't miss tortillas at all - but I could go for a big bowl of QUESO!

5-31 Started with eggs and bacon. Snacked on almonds. Lunch was chicken with mustard and pickles. Afternoon snack of spoon of sunbutter. Dinner, chicken and steamed veggies. Yummy

I am not leading my example today. I am lacking in fruits and veggies (see my blog post) but good to go on meat. The morning started with 1 1/2 grass feed beef dogs (compliments of my super cool coach) and almonds. Lunch is fajita chicken with bell pepper and onion topped with organic salsa (yummy). Haven't figuered out dinner yet but I know the night will end with celery and 1 T of Sunbutter....best dessert ever!
I am not overwhelmed with cravings but I do look forward to the day that I can add wine and dairy back in to my diet. I do wonder though just what my new system is going to be willing to take....hmmmm????......

Keeping a meal by meal journal is way too tedious for me. I know. I know. The experts say you should write down what you eat. They also say you should eat a bagillion servings of grain every day. What do they know?
I know that the difference that makes a difference for me is keeping things simple. My hubby grills every weekend - hamburger steaks, chicken, brisket - or makes a mean Paleo meatloaf! Then we freeze in meal sized portions and I'm good to go for the week. I add an avocado, green beans, and/or some salad greens and it's a delicious Paleo lunch. Breakfast is usually a coconut milk, organic strawberry, banana, pineapple juice, protein smoothie. Dinner is repeat breakfast or lunch. Snacks include a few nuts, some fruit, or more meat. That's it! Keep it surprisingly simple!
And drink lots of Starbuck's green tea. It's especially refreshing in the insulated, refillable, and completely cute Starbuck's cup that travels with me wherever I go!
May 29 - Jason's Deli - Currently my favorite place to eat Paleo. Organic mixed greens, red and green bell peppers, broccoli, sunflower seeds, and basalmic vinaigrette make up the salad. On the side I like hard boiled eggs, apple slices, nut mix (I pick around the sesame sticks which are delicious, but not Paleo), and a bit of dried fruit/walnut mix. Add a refreshing organic pomegranite melon green tea, and I feel like I've treated myself to something really special! YUMMO!
May 31 - Repeat May 29! Jason's Deli has saved me on the weekends - and holidays! Tonight I ate a grilled grass-fed all beef hot dog, baked sweet potato with cinnamon and some grilled zucchini. Scrumptious!! Lunch is packed for tomorrow. Life is good!
